My hubby is soooo picky when it comes to what he eats. He’s not big on many veggies so if he shows interest in anything in the produce world I am all over it. One of his favorite things is pico de gallo. He will eat it with his burgers or hot dogs and sometimes all by itself.
I try to keep some in the frig for him to spot and grab when he is looking for something to munch on. As most of us are, he is a mindless eater…meaning, he doesn’t need to be hungry to eat. So if I can help pump some nutrition into him during this mindless process, I’m on it!
It’s so simple to make and I usually have all the ingredients on hand. Give it a try this holiday weekend. Serve it with chips or even as a garnish to burgers or dogs.
3-4 large tomatoes
1 small sweet onion
2 cloves garlic
lime or lemon
*jalapeno peppers, seeded and finely chopped
Slice tomatoes in half and then remove seeds. After seeds removed dice tomatoes into small pieces.
Chop onion to preference (my husband likes really small pieces where I am fine with nice diced pieces)
Use garlic press to press garlic cloves and then chop with knife.
Use cilantro to taste. It’s a pretty strong herb so add gradually.
I use about half of a lime, again it’s more about personally preference.
Pinch of salt, my preference is Himalayan salt.
*I will add some jalapeno peppers into if hubby is not around. He likes mild and I like spicy!
Mix all of the ingredients into a bowl and allow to sit for at least 30 minutes.
