Ingredients:

4 Eggs
1 Sweet Potato
Portobello Mushrooms (8-10)
Coconut Oil

Directions:

Peel sweet potato and grate.

Heat coconut oil in a skillet, add mushrooms and sweat them. The process of sweating mushrooms (or any food for that matter) means making them release water. Once they start to turn golden, add the shredded sweet potato. You might need to add some more coconut oil before adding sweet potatoes.

Once the sweet potatoes start cooking crack eggs and added to the skillet one at a time. Add water to the top of the lid and cover the skillet. The steam will all the eggs to steam on top. That’s if you want an “over easy” type of egg. If you like sunny side up don’t use water in the lid.
