Chunky Chipotle Chicken Soup

I gather my veggies to cut and layer in the slower cooker.


After cutting my veggies I put my onion, garlic and pepper in the bottom of slower cooker and added the chopped chipotle chiles in adobo sauce and then layered the other veggies. The chipotle chiles in adobo sauce makes this recipe very spicy. I added extra to mine. If you don’t like spicy, cut back on the sauce.


I browned the chicken in a skillet, removed the chicken then added the broth to scrap down the skillet. I added the chicken to the slower cooker and poured broth on top.


After cooking for 7 hours…I eat! I decide to add a little avocado and a touch of light sour cream. It was very spicy, which I loved. It was way too hot for the hubby and the daughter thought it was ok. Me, I would give it 5 stars!

I will make this again!
