My 21 Day Anti-Inflammatory Diet Day 2

I usually do something at the beginning of the year to give my health a boost. So this year I decided to focus on inflammation and started a 21 day anti-inflammatory diet yesterday. I deal with asthma which is basically inflammation of the lungs and I have noticed that the joints in my fingers have been starting to hurt off and on lately.

Unfortunately for me one of the things you need to let go of while working on inflammation is that beloved cup, or two, or three of morning of joe. Let’s just say that yesterday morning was NOT my favorite morning of the year. Yeah, I know it just started but it really was a rough morning. I missed that warm cup of coffee with my quiet time. I did drink a dandelion tea but it’s just wasn’t like having my morning cup of coffee. I did end up with a headache and felt tired most of the day. Needless to say, last night had a very early bedtime for me.

On to day two and things seem to be a little better. This morning was still rough and I still miss my coffee, like bad. But it was better today. I didn’t get a headache but I have felt tired all day. I guess you could say that today I’ve been in a little bit of a funk. I know as the days go by I will feel so much better and my energy will return. I am sooo looking forward to that. But for now, I am going to enjoy the journey.

 

 

I made what is called a Quinoa Flatbread Pizza. The “flatbread” has a texture and taste similar to cornbread. I loved both of those things about it but it truly lacked flavor. I am definitely making this again but next time it will have my twist on it.

 

 

 

I am basing my 21 diet eating plan off of the book Anti-Inflammatory Diet in 21 by Sondi Bruner. I love that it has menus and shopping lists (if you buy the book be careful of the shopping list. I think she might have changed some things around right before print and forgot to change the lists or something) included but what I have found is that the recipes lack a little flavor. So, I am taking her ideas and expanding on them. She has great ingredients but most recipes just lack something. I love food way too much to eat bland food. I am on a mission to make this 21 days full of yumminess. I don’t believe that on any dietary plan you should have to eat food that you just don’t love. So here’s to making some incredible food over the next 19 days and counting.

Shakeology is Not Just for Shakes

I absolutely LOVE Shakeology. One of the best things about it, you can do more than just drink it. You can make cookies and pies and all kinds of yumminess. Pick your favorite flavor and get creative. Not sure which flavor you like? Get a sample and find out.

Grilled Romaine Lettuce

Grilled Romaine Lettuce

Does anyone else think throwing something on the grill makes everything taste better? One of my most FAV things to grill is romaine lettuce. I know it may sound crazy but it is delish!!!! It’s so easy to do, takes only a few minutes and the outcomes is fantastic!

Head of romaine lettuce
Oil for brushing lettuce
Medium High grill
Favorite dressing

Literally just cut the romaine head in half, brush it with oil (flavored if you’d like) and put cut side down on the grill. If you walk away, don’t stay gone too long, it grills up fast. I usually flip the lettuce once and get some markings on the back side and then it’s done! Top with a little chicken, other grilled veggies and your favorite dressing and you have an amazing meal all in a matter of minutes.

Just a quick tip, I love the smaller heads of romaine that they have at Costco. I use them for taco shells, wraps and whatever else I can come up with because they are the perfect size.

IMG_3432Ok….truth time. I have a really big event coming up in July. Yes, I have known about it for A YEAR! And NO I didn’t stick with my goal to get in the best shape of my life during that year. (Did I mention this is a fitness convention and there will be some ahhhhhmazingly fit people there)

So, it’s crunch time for this girl. I’m out to see what I can accomplish in a very healthy way in a very very short time. 80% of weight loss happens in the kitchen. And half the battle with the 80% is your food prep!

This took me very little time and I did it all on the grill because it was absolutely gorgeous out today.

It’s Bout to Get Real!

It's Real!Has there been a time in your life where you just knew you weren’t being true to who God created you to be? Perhaps you’re like me and that time is right now.

For a while now (actually most of my life) I have felt like I haven’t been true to all that God created me to be. I have worried about judgment and rejection (and yes, even some unfriending or unfollowing). However, I know without a doubt it’s time to lay all of that down, spread my wings and become ALL He has created me to be. It’s still a little scary thinking about what others will think or say BUT I am beyond excited!!!!

I know the only way I am going to see a change between now and then is if I lay out my plan and commit to staying focused. I know how easy it is to get off track and talk yourself out of plan so I have my work cut out for me….It’s bout to get real up in here!
