the_pWould you admit that your hard boiled eggs ain’t all that and actually resemble rubber sometimes? For YEARS I had no idea that I was over cooking my hard boiled eggs. I thought a boiled egg was a boiled egg….WRONG. Seriously, how can you over cook a hard boiled egg, right? Well surprise to me. I didn’t know when I boiled my eggs and they come out with a dark greenish ring around the yellow, they were waaaay over cooked. But I don’t do that anymore!

Here is a foolproof way to get them to come out perfect every time. And it’s so easy peasy!

Here’s all you need:

Boiling pot
Cool water enough to cover the eggs

Put the eggs in the pot and cover them with cool water. Put the pot on med-high and allow the water to come to a boil. Once the water starts to boil, immediately remove from the eye and put a lid on the pot. Set a timer for 10 minutes. When timer goes off put eggs in a colander and rinse with cold water. Take the pot and cool it off with cold water then put eggs back into the pot and cover them with cold water. Let the eggs sit in the cold water for a few minutes so that they stop cooking. Voila!! Peel and enjoy!

Grilled Romaine Lettuce

Does anyone else think throwing something on the grill makes everything taste better? One of my most FAV things to grill is romaine lettuce. I know it may sound crazy but it is delish!!!! It’s so easy to do, takes only a few minutes and the outcomes is fantastic!

Head of romaine lettuce
Oil for brushing lettuce
Medium High grill
Favorite dressing

Literally just cut the romaine head in half, brush it with oil (flavored if you’d like) and put cut side down on the grill. If you walk away, don’t stay gone too long, it grills up fast. I usually flip the lettuce once and get some markings on the back side and then it’s done! Top with a little chicken, other grilled veggies and your favorite dressing and you have an amazing meal all in a matter of minutes.

Just a quick tip, I love the smaller heads of romaine that they have at Costco. I use them for taco shells, wraps and whatever else I can come up with because they are the perfect size.

IMG_3432Ok….truth time. I have a really big event coming up in July. Yes, I have known about it for A YEAR! And NO I didn’t stick with my goal to get in the best shape of my life during that year. (Did I mention this is a fitness convention and there will be some ahhhhhmazingly fit people there)

So, it’s crunch time for this girl. I’m out to see what I can accomplish in a very healthy way in a very very short time. 80% of weight loss happens in the kitchen. And half the battle with the 80% is your food prep!

This took me very little time and I did it all on the grill because it was absolutely gorgeous out today.

It's Real!Has there been a time in your life where you just knew you weren’t being true to who God created you to be? Perhaps you’re like me and that time is right now.

For a while now (actually most of my life) I have felt like I haven’t been true to all that God created me to be. I have worried about judgment and rejection (and yes, even some unfriending or unfollowing). However, I know without a doubt it’s time to lay all of that down, spread my wings and become ALL He has created me to be. It’s still a little scary thinking about what others will think or say BUT I am beyond excited!!!!

I know the only way I am going to see a change between now and then is if I lay out my plan and commit to staying focused. I know how easy it is to get off track and talk yourself out of plan so I have my work cut out for me….It’s bout to get real up in here!

Tiramisu Shakeology SmoothieOne of my fave desserts is tiramisu and my favorite place to get it is Amerigo’s, an Italian restaurant here in Nashville.

“Tiramisu” is the Italian word for “little pick-me-up.” However, if you have ever had the dessert before you know it’s definitely something you only treat yourself to once in a while because it a definite “weigh-you-down” loaded with sugar and wasted calories.

I have great news though! I have found away to have it everyday as a little pick-me-up that is loaded with nutrition you will never find in the traditional dessert. OMGosh!!! Try this tiramisu-flavored smoothie!

Prep Time: 5 min.
Cooking Time: None
Yield: 1 serving

1 cup brewed coffee, chilled
1 scoop Vanilla Shakeology
1 Tbsp. mascarpone cheese (or part-skim ricotta cheese)
1 tsp. unsweetened cocoa powder
½ tsp. pure rum extract
½ cup ice


1. Place coffee, Shakeology, cheese, cocoa powder, extract, and ice in blender; cover. Blend until smooth.
